With summer finally here, intake of produce naturally increases with an abundance of sweeter varieties of fruits and vegetables. From apricots to melons and sweet corn, it seems easier to eat colorful plant varieties that harbor many vitamins and nutrients. Beyond availability, how the foods are prepared can also be the key to making produce more appealing to our families. For example, corn on the cob is often a family favorite because of the entirely different way it is eaten. Keeping that in mind, now is the time to continue introducing new foods. Using varying preparation techniques can be a helpful approach. Get out your grater and shred carrots or zucchini into muffins and quick breads. Finely chop mushrooms and add them to ground meat for burgers and meatballs. |

Farm to table has become a more popular concept over the last few years. Many restaurant menus have touted farm to table concepts, as have special school programs whereby students plant and harvest for use in their own lunch offerings. In addition, community supported agriculture survives as any co-op would. In this system, individuals commit to financially supporting a year’s upcoming crop in return for weekly produce delivery throughout the harvest season. Farmer’s Markets and U-Pick operations offer direct farm to consumer experiences. No matter which type of farm to table establishment you choose to take advantage of, following a few simple tips can enhance the experience. Plan ahead if possible, by visiting an organization's website. Be prepared to try new things, but also talk to farmers and sellers. They typically have great advice on how best to incorporate their products into every day meals. |

Oftentimes, parents think of kid appropriate dinnerware as items that are plastic with smiling characters all over it. However, many studies and teaching methods suggest that children begin their dining routintes with the same glass or porcelain wares already being used by adults in the household. Montessori teaching, for example, aims to subtly give kids responsibility early on by allowing natural consequences to occur. If a glass falls and breaks, the consequence is clear and more care results from the experience. In short, kids are capable of handling all types of dinnerware. Also, many kids are intimidated or confused by characters on utensils, plates and the like. Minimizing distractions, including any inadvertent stressors, during meal times is a key aspect of ensuring adequate intake. |
